Please could someone tell me how to remove or change the icons on the menu.

How about to study a little the stylesheet.css?
There you find 4 definitions (doc, docs, sdoc, sdocs). Play with them a little. You'll find the way.
If you want to use your own icons, it is good to leave them the same names and have them saved in the [templates]/[your_template]/[menu] folder.
Then you have to adjust the definitions in stylesheet.css pointing to url(./menu/doc.gif)... etc.
