On 3 of my clients websites, the whole site is suddenly changed from a perfect working site to be showing this

Hi Jens,
it seems to me that is the changelog of one (or several) plugin(s). I assume that this plugin uses PHP short open tags (<? instead of <?php) and the provider has changed the setting of short_open_tag to Off.
Simple solution: have a look at the plugin files (presumably index.php) and change the <? to <?php
