Plugin causes Settings problems...

Hi all,
First posting here and I would like to say how much I like CMSimple, I am using it for my own homesite and am currently building it into a few new sites that I'm working on.
I have stared to experiment with the installation of a few plug-ins and am liking the results, however I am coming up against a persistent problem that I'm wondering if anyone knows the answer too.

After installing a plugin (not all plugins seem to cause this fault) I loose the main site settings page. The setting page will display and I can choose the options of config, templates, etc... but when I choose one of these options I am presented with a page that just gives me the option to 'SAVE', nothing else! Even worse if I do chose save, the config.php returns all settings to blank and closes CMSimple completely.

Anyone got any ideas?
